Hiya,

I'm new to this forum so I'll quickly introduce myself. I'm Anna and I'm 33 with 2 yound children.nnim currently on maternity leave but usually I work as a Operating Department Practitioner in a large hospital.
I bakes cakes as a bit of a sideline, usually for friends and family but the word is getti g round and I'm making more and more :)
I usually bake birthday cakes/novelty cakes but I've had a few requests or wedding cakes.

Now I usually make a Victoria sponge but I know for a heavy wedding cake it will have to be a Madiera.
I've been looking up quantities for the next cake which I will be making (10" square Madeira, 8" square Madeira and a 6"square chocolate cake)

For the 10" cake the quantities I've been given are 700g self raising flour, butter and caster sugar. 350g plain flour and 12 eggs
For the 8" cake 450g flour, sugar and butter and 8 eggs
And for the 6" choc 225g choc, 175g butter 115g caster sugar, 6 eggs and 17g self raising flour

All these ingredients will (I presume) be X 2 as each cake is not going to be very deep I assume.

Anyway my question is...do these quantities sound correct as for a cake which isn't really that big, it seems an awful lot of ingredients.

Ive added it up for a pricing but I've totalled everything up as

3,310g butter
2650g self raising flour
1150 plain flour
2530g caster sugar
52 eggs
450g plain choc

This includes butter for buttercream too

I make bread alot, your problem could be that your dough is to dry. It should feel soft and sticky after mixing.If dry it will not develope.
2. The dough was not sufficiently kneaded. It should feel smooth and elastic after kneading.
To test the dough for sufficient kneading,press with your finger tip,the indent should spring back immediately,if not continue to knead.
3. The dough has not risen enough, it should be double the original size before you knock it back for the second time.(Knead it for a second time usually another 10 mins or so.)AND YOU WILL KNOW AS THE DOUGH WILL FORM INTO A TIGHT BALL.and then if you let it relax for a second or two it will go soft again.
This is the recipe I use and it never fails.
750g of strong bread flour
4tbls veg oil
350/400mls warm water
2tsp sugar(caster sugar)
2tsp salt
24gms fresh yeast (you can use dried yeast however I find this gives the loave a far better flavour)

Method:
Put the flour, salt and oil into your mixing bowl.
In a cup put the sugar and yeast,add some of the cooled boiled water( hand hot or you will kill off the yeast) to make paste then add a little more of the water.

Right ready to mix it all together in a mixer if you have one, add the yeast and slowly add some of the water untill you get the right consistancey as you may not need all the water.

Mix for a good 10 mins, then tip it out onto a lightly floured surface and knead and shape into a ball,mean while oil a bowl and put your dough in and cover wth cling film leave to prove and double it' size

Once this has been acheived take the dough out and knead again for about 10 mins and leave to relax,at this point you can now shape the dough by hand or split it into 2 and put it into an oiled and floured baking tin and leave to rise again.I usually judge this when it has come 3/4 up the loave tin.

Bake in an oven at 200*c untill golden brown, take out and tap the bottom if it sounds hollow its ready if not put back untill you get that hollow sound. Hope this helps and good luck .

I used to love to bake, my Food GCSE project was about new puddings and developing old favourites. I would make fruit cakes for people at christmas or special occasions and loved seeing their faces as they enjoyed another slice of cake. Once I got my own house and was cooking my own meals every night, my love for baking transformed into a love for cooking and i was baking les and less.
When i had my son two years a go i decided to start up again, so step by step i am rebuilding my skills and learning new ones.I am not very artistic so find decorating/icing hard but this is something I plan to learn.

For the cake
• 100g butter • 100g hot chocolates dark chocolate buttons [www.hotchocolates.biz] • 75g dark muscovado sugar • 100ml golden syrup • ¼ pt milk • Grated zest 1 orange • 175g plain flour • 1 teaspoon bicarbonate of soda • 2 round teasp ground ginger • 1 round teasp ground cinnamon • 1 large egg
For the topping
• 100g butter • 75g hot chocolates dark chocolate buttons [www.hotchocolates.biz] • Juice 1 orange • 50g icing sugar

Preheat the oven to 150ºC/300ºF/gas mark 3. Grease and line a 7in square baking tin with greaseproof paper. Once melted add the chocolate mixture to the dry ingredients and beat well. Add the egg and beat again. Pour mixture into the tin. Bake in the oven for exactly 30 mins, test cake with a skewer in the centre, if it does not come out clean leave for another five mins and keeping testing until skewer is clean. Leave to cool in tin for 10 mins then empty out on to a wire tray to cool completely. Place cake on serving dish.
For the topping, melt the butter, chocolate, icing sugar and orange juice in a small pan over a gentle heat stirring all the time. Pour over the cake and eat when cold, if you can wait! Sharon

i have only been baking for about 9 months since my lil girl was born (she is very well behaved!) and now have more time to myself now im a full time mummy..........
